Method

Making the Fritters
  1. Grate the medium zucchinis using a box grater or food processor.
  2. Place the grated zucchini in a kitchen towel, sprinkle with salt, and let sit for 10 minutes. Squeeze to remove moisture.
  3. In a large bowl, combine the drained zucchini with flour, crumbled feta cheese, eggs, green onions, parsley, garlic powder, and black pepper.
  4. Heat olive oil in a large skillet over medium heat.
  5. Scoop about 2 tablespoons of the zucchini mixture and shape it into a patty. Cook in the skillet.
  6. Let the fritters cook for 3–4 minutes on each side until golden brown.
  7. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  8. Serve warm, garnished with extra feta or fresh herbs.
