Instructions
Preheat oven to 350°F (175°C) and prepare muffin tin with liners or grease.
In a large bowl, mix cottage cheese, sugar, oil, eggs, vanilla, lemon zest, and lemon juice until creamy.
In another bowl, whisk together flour, poppy seeds, baking powder, baking soda, and salt.
Gently fold dry ingredients into wet mixture until just combined.
Fill muffin tin cups about 2/3 full.
Bake for 20-25 minutes until a toothpick comes out clean and tops are golden.
Cool in the tin for 5 minutes, then transfer to wire rack.

For an extra touch, enjoy with a light glaze for sweetness.
