  • 1 can Diced green chilies

  • 1 cup Corn frozen or canned
  • 1 cup Heavy cream optional

Method

How to Make White Chicken Chili
  1. In a large pot or Dutch oven, warm the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes, until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the cooked chicken, white beans, diced green chilies, chicken broth, ground cumin, chili powder, paprika, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  5. Add the corn and heavy cream (if using) to the pot. Cook for an additional 5 minutes until heated through.
  6. Taste your chili and adjust the seasoning with more salt and pepper if needed.
  7. Ladle the chili into bowls and garnish with fresh cilantro. Serve with lime wedges.
