Ingredients

For the Dip
  • 8 ounces Feta cheese crumbled
  • 4 ounces Cream cheese softened
  • 1/2 cup Greek yogurt
  • 2 tablespoons Olive oil plus more for drizzling
  • 2 tablespoons Lemon juice freshly squeezed
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Pepper
For the Roasted Tomatoes
  • 2 cups Cherry tomatoes
  • 1 tablespoon Balsamic vinegar optional
For Garnish
  • 1/4 cup Fresh basil chopped

Method

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the cherry tomatoes by placing them on a baking sheet. Drizzle with olive oil and generously sprinkle salt and pepper. Toss to coat them evenly.
  3. Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are blistered and caramelized.
  4. Combine in a food processor the crumbled feta cheese, cream cheese, Greek yogurt, olive oil, lemon juice, dried oregano, salt, and pepper.
  5. Blend until smooth and creamy.
  6. Transfer the whipped feta dip to a serving bowl.
  7. Spoon the roasted tomatoes over the top of the dip.
  8. Garnish with fresh basil leaves.
  9. Serve with crackers, pita chips, or fresh vegetables.
