Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Cube the French bread into 1-inch cubes and place them evenly in the prepared baking dish.
Whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, vanilla bean seeds, ground cinnamon, and salt in a large mixing bowl.
Pour the custard mixture evenly over the bread cubes, ensuring each piece is well-coated.
Press down gently on the bread cubes to encourage absorption of the custard. Cover and refrigerate for at least 30 minutes, or overnight if desired.
Drizzle melted butter over the top of the soaked bread cubes just before baking.
Bake in the preheated oven for 45–50 minutes, or until golden brown and set.
Cool for about 5–10 minutes before serving.
Dust with powdered sugar if desired, and serve alongside maple syrup.
