  • 2 fillets Salmon (6 oz each) skin on or off
  • 1 tbsp Olive oil for searing
For the Sauce
  • 2 tbsp Butter for creaminess
  • 3-4 cloves Garlic minced
  • 1/4 cup Sun-dried tomatoes chopped
  • 1 cup Heavy cream
  • 1 cup Fresh spinach
  • 1/4 cup Parmesan cheese grated
  • 1/4 tsp Red pepper flakes optional
  • Salt and pepper to taste

  • Fresh parsley or basil optional

Method

How to Make Tuscan Butter Salmon
  1. Prep the Salmon: Pat the salmon fillets thoroughly with paper towels.
  2. Heat the Pan: Warm a skillet over medium-high heat until it sizzles.
  3. Sear the Salmon: Add salmon fillets and sear for 3-4 minutes on each side.
  4. Set Aside: Remove the salmon and set aside.
  5. Melt the Butter: In the same pan, melt the butter over medium heat.
  6. Sauté the Garlic: Add minced garlic and sauté until fragrant.
  7. Incorporate the Tomatoes: Stir in chopped sun-dried tomatoes.
  8. Pour in the Cream: Add the heavy cream and let it simmer.
  9. Add the Spinach: Stir in fresh spinach until just wilted.
  10. Finish with Cheese: Mix in grated Parmesan and red pepper flakes.
  11. Season to Taste: Add salt and pepper as needed.
  12. Reheat the Salmon: Return salmon to the pan or pour sauce over.
