Ingredients

For the Salmon
  • 6 oz Salmon fillets use skin-on for extra moisture and flavor
  • 1 tbsp Olive oil ideal for searing the salmon to perfection
For the Creamy Sauce

  • 3-4 cloves Garlic minced
  • 1/4 cup Sun-dried tomatoes chopped
  • 1 cup Heavy cream for a luscious, velvety base
  • 1 cup Fresh spinach wilted into the sauce
  • 1/4 cup Grated Parmesan cheese sprinkle in for added depth of flavor
  • 1/4 tsp Red pepper flakes optional for heat
For Seasoning and Garnish
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or basil for garnish

Method

How to Make Tuscan Butter Salmon
  1. Begin by patting your salmon fillets thoroughly with paper towels.
  2. Heat a pan over medium-high heat until it's hot enough to sear.
  3. Add the salmon fillets to the hot pan. Sear for 3-4 minutes per side.
  4. Remove the salmon from the pan and set it aside on a plate.
  5. In the same pan, melt butter or heat olive oil over medium heat.
  6. Sauté minced garlic in the melted butter until fragrant.
  7. Stir in the chopped sun-dried tomatoes and cook them briefly.
  8. Pour in your heavy cream and let it simmer gently until it slightly thickens.
  9. Stir in the fresh spinach, cooking just until wilted.
  10. Gradually mix in the grated Parmesan cheese and red pepper flakes.
  11. Season the sauce with salt and freshly ground black pepper to taste.
  12. Return the salmon to the pan to warm through or pour the sauce over the salmon.
  13. Garnish your Tuscan Butter Salmon with fresh parsley or basil.
