Ingredients

For the Stir-Fry
  • 1 lb ground turkey a lean protein
  • 1 tbsp soy sauce adds umami flavor
  • 1 tbsp sesame oil brings nutty aroma
  • 4 cups mixed vegetables fresh or frozen
  • 2 medium carrots sliced thin
  • 3 cloves garlic minced
  • 1 tbsp ginger freshly minced
  • 1 tbsp cornstarch optional, for thickening
For Seasoning
  • to taste salt
  • to taste pepper
For Serving
  • 2 cups cooked rice or quinoa optional
  • 2 tbsp green onions optional, for garnish
  • 1 tbsp sesame seeds optional, for garnish

Method

How to Make Turkey & Vegetable Stir-Fry
  1. Wash and chop your vibrant mixed vegetables and carrots into bite-sized pieces.
  2. Mince the garlic and ginger closely.
  3. Heat the sesame oil in a large skillet over medium-high heat.
  4. Add the ground turkey and cook for about 5–7 minutes until browned.
  5. Drain any excess fat from the skillet.
  6. Stir in the minced garlic and ginger, cooking for 1–2 minutes.
  7. Add the mixed vegetables and sliced carrots, stir-fry for 3–5 minutes.
  8. Pour in the soy sauce and stir to combine thoroughly.
  9. If using cornstarch, mix it with a little water to create a slurry.
  10. Taste your stir-fry and adjust seasoning with salt and pepper.
  11. Serve the stir-fry over a bed of cooked rice or quinoa.
  12. Garnish with chopped green onions and sesame seeds.
