Spread the Pesto: On one side of each slice of sourdough bread, generously spread your homemade pesto.
Layer the Filling: On half of the slices, layer the cooked turkey, mozzarella cheese, and sun-dried tomatoes if you’re using them.
Preheat Your Grill: If using a panini press, preheat it according to the manufacturer's instructions. For those using a skillet, heat it over medium heat.
Brush with Olive Oil: Lightly brush the outside of each sandwich with olive oil.
Grill the Sandwiches: Place the sandwiches on the panini press or in the skillet and grill for about 3-5 minutes on each side.
Serve Warm: Remove the panini melts from the heat and slice them in half. Serve warm.
