Ingredients

  • 4 medium Potatoes diced
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 4 cups Chicken or Vegetable Broth low-sodium recommended

  • 1 cup Cooked Chicken Breast
For Creaminess
  • 1 cup Milk whole or plant-based
Seasonings
  • 1 teaspoon Dried Thyme or fresh thyme
  • Salt to taste
  • Pepper to taste
For Topping
  • 1 cup Shredded Cheese cheddar or favorite
  • 2 stalks Green Onions chopped
  • 1/2 cup Cooked Bacon Bits optional

Method

Cooking Instructions
  1. Begin by heating 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add 1 diced medium onion and cook for about 3–4 minutes until softened. Stir in 2 minced garlic cloves and cook for 30 seconds.
  3. Toss in 4 diced medium potatoes and pour in 4 cups of broth. Bring to a boil.
  4. Reduce heat to low and let the soup simmer for 15–20 minutes until potatoes are tender.
  5. Use an immersion blender to puree the soup to your liking.
  6. Mix in 1 cup of milk, 1 cup of shredded chicken, 1 teaspoon of dried thyme, and season with salt and pepper.
  7. Serve hot, topped with shredded cheese, chopped green onions, and bacon bits if desired.
