Method

How to Make Taco Stuffed Sweet Potatoes
  1. Preheat your oven to 400°F (200°C).
  2. Wash and prep the sweet potatoes. Poke holes in each potato.
  3. Drizzle and season with olive oil and salt.
  4. Bake sweet potatoes for about 40-45 minutes until tender.
  5. Sauté the onion in olive oil until translucent, about 3-4 minutes.
  6. Brown the ground turkey or beef until cooked, about 5-7 minutes.
  7. Mix in black beans, corn, diced tomatoes, and taco seasoning. Cook for 5 minutes.
  8. Slice each roasted sweet potato down the center.
  9. Fluff the insides of the sweet potatoes and fill with taco filling.
  10. Top with shredded cheese and return to oven for 5-7 minutes until melted.
