Ingredients

For the Meatballs
  • 1 pound Ground turkey
  • 1/2 cup Breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1/4 cup Fresh parsley chopped
  • 1 large Egg
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Onion powder
For the Sauce
  • 1/2 cup Sweet chili sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil optional
For the Assembly
  • 4 pieces Sub rolls
  • 2 cups Shredded lettuce
  • 1 cup Sliced cucumbers optional
  • 1/4 cup Sliced green onions optional

Method

Directions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, pepper, and onion powder in a large bowl. Mix until just combined.
  3. Form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them evenly on the prepared baking sheet.
  4. Bake the meatballs for about 15-20 minutes until cooked through and golden brown.
  5. Heat the sauce by combining sweet chili sauce, soy sauce, rice vinegar, and sesame oil in a small saucepan over medium heat.
  6. Drizzle the warm sauce over the baked meatballs, tossing gently to coat evenly.
  7. Slice the sub rolls in half and lightly toast them if desired.
  8. Assemble by placing several meatballs into each sub roll and drizzle with additional sauce if desired.
  9. Top with shredded lettuce, sliced cucumbers, and sliced green onions.
  10. Serve the sweet chili turkey meatball subs warm.
