Preparation
Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
Combine the dry ingredients in a large bowl: 2 cups of rolled oats, 1 cup of whole wheat flour, 1/2 teaspoon baking powder and baking soda, 1 teaspoon cinnamon, and 1/4 teaspoon salt.
Whisk together the wet ingredients in another bowl: 1/2 cup honey, 1/2 cup unsweetened applesauce, and 1 tablespoon lemon juice.
Mix the wet and dry ingredients together until just combined.
Spread half of the oatmeal mixture into the bottom of your prepared baking dish.
Layer the sliced strawberries over the oatmeal base.
Crumble the remaining oatmeal mixture on top and gently press down.
Bake for 25–30 minutes or until edges are golden brown and toothpick comes out clean.
Allow the bars to cool in the dish for about 10 minutes before transferring to a wire rack.
Slice the bars once cooled and enjoy. Store leftovers in an airtight container.
