Ingredients

Batter
  • 2 cups Glutinous rice flour (mochi flour)
  • 3/4 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Coconut milk Can swap with almond or regular milk
  • 1 cup Fresh strawberries (pureed)
  • 1 teaspoon Vanilla extract
Glaze
  • 1 cup Powdered sugar
  • 2 tablespoons Milk Adjust for desired thickness
Garnish
  • 1 cup Fresh strawberries (sliced)
  • 1/2 cup Shredded coconut

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or oil.
  2. Combine the dry ingredients in a mixing bowl: glutinous rice flour, granulated sugar, baking powder, and salt.
  3. Mix wet ingredients in a separate bowl: coconut milk, pureed strawberries, and vanilla extract.
  4. Fold the dry ingredients into the wet ones until smooth, being careful not to over-mix.
  5. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  6. Bake for 15–18 minutes. Check doneness with a toothpick; it should come out clean.
  7. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  8. Whisk together the glaze ingredients: powdered sugar and milk until smooth.
  9. Dip the cooled donuts in the glaze and let the excess drip off.
  10. Top with sliced strawberries and shredded coconut, then serve and enjoy!
