Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Combine the sliced strawberries, 2 tablespoons of sugar, cornstarch, and vanilla extract in a bowl and gently toss together.
Mix the softened cream cheese, remaining sugar, and lemon juice in another bowl until silky smooth.
Unroll the crescent roll dough and separate the triangles. Arrange them on the prepared baking sheet, overlapping edges slightly.
Spread the cream cheese mixture evenly over the center of the dough.
Spoon the strawberry filling over the cream cheese layer.
Fold the edges of the dough over the filling. Brush these edges with beaten egg.
Bake for 15-20 minutes, or until the dough is golden brown.
Cool the Danish slightly on the baking sheet.
Dust with powdered sugar if desired before serving.
Notes
For a refreshing zing, a sprinkle of lemon zest on top can be added.
