Waffle Preparation
Whisk together the dry ingredients in a large mixing bowl: flour, sugar, baking powder, and salt.
Beat the eggs in another bowl, then add milk, melted butter, and vanilla extract. Mix until combined.
Combine the wet and dry ingredients by slowly pouring the wet mixture into the dry. Stir gently until just combined.
Preheat your waffle iron according to manufacturer’s instructions.
Pour the batter into the preheated waffle iron and cook for 4-5 minutes until golden brown.
Cheesecake Filling Preparation
Beat the cream cheese in a mixing bowl until smooth. Gradually add powdered sugar and vanilla extract.
Fold in the whipped cream gently until the mixture becomes light and fluffy.
Assembly
Spread a generous amount of cheesecake filling on one waffle, then add sliced strawberries.
Create a sandwich by placing another waffle on top. Repeat for remaining waffles.
Dust with additional powdered sugar if desired and serve immediately.
Notes
For the best texture, mix wet and dry ingredients just until combined. Serve immediately to prevent waffles from becoming soggy.
