How to Make Strawberry Cheesecake Cookies
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
Cream together the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy, about 2-3 minutes.
Add in the egg and vanilla extract, and beat until well combined.
Whisk together the flour, baking soda, and salt in a separate bowl.
Combine the dry ingredients with the wet mixture gradually, mixing until just combined.
Fold in the softened cream cheese, chopped strawberries, and optional white chocolate chips gently.
Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set but still soft.
Cool the cookies on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Garnish the cookies with additional chopped strawberries if desired.
