Method
Marinade and Cook Steak
Whisk together the marinade by combining olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a bowl. Mix until well-blended and aromatic.
Marinate the steak by placing it in a resealable bag or shallow dish. Pour the marinade over it, seal or cover, and refrigerate for 30 minutes to 2 hours for maximum flavor.
Preheat your grill or skillet over medium-high heat. Ensure it's hot enough to give your steak a beautiful sear.
Cook the steak by removing it from the marinade and placing it on the grill. Sear for 5–7 minutes on each side until medium-rare or until you reach your desired doneness.
Rest the steak after cooking by removing it from the heat and letting it sit for a few minutes.
Prepare the Fajita Veggies
Heat olive oil in a large skillet over medium heat.
Sauté the veggies by adding sliced bell peppers and onions, seasoning with chili powder, salt, and pepper. Cook for 5–7 minutes until they are tender and slightly caramelized.
Assemble the Bowls
Prepare the bowls by adding a serving of cooked rice or quinoa at the bottom of each bowl.
Layer your toppings by placing sliced steak, sautéed veggies, black beans, and avocado on top of the rice.
Garnish your creation with fresh cilantro and serve each bowl with lime wedges on the side.
Add optional toppings such as sour cream or salsa to enhance your Steak Fajita Power Bowls.
