Method
Directions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to ensure easy removal later.
Whisk together the flour, baking powder, baking soda, and a pinch of salt in a medium bowl.
Beat the sugar, eggs, vegetable oil, vanilla, lemon extract, lemon zest, lemon juice, and sour cream together in a large bowl until smooth.
Fold the dry ingredients into the wet mixture gradually.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Cool the loaf in the pan for 10 minutes, then gently transfer it to a wire rack to cool completely.
Whisk together the icing sugar, lemon juice, vanilla, lemon extract, and enough heavy cream to reach your desired consistency.
Drizzle the icing over the cooled loaf and let it set before slicing.
Notes
Garnish with extra lemon zest on top for an added burst of flavor!
