How to Make Starbucks Copycat Lemon Loaf
Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat together the sugar, eggs, vegetable oil, vanilla, lemon extract, lemon zest, lemon juice, and sour cream until smooth.
Gently fold the dry mixture into the wet ingredients until just combined.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50-60 minutes until a toothpick inserted comes out clean.
Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
For the icing, whisk together the icing sugar, lemon juice, vanilla, lemon extract, and heavy cream until smooth.
Once the loaf is cooled, drizzle the icing over the top and let it set before slicing.
