Method

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Mix the filling by combining goat cheese, chopped spinach, cream cheese, minced garlic, dried oregano, salt, and black pepper in a mixing bowl.
  3. Butterfly each chicken breast by slicing it horizontally, creating a pocket.
  4. Stuff each chicken breast pocket with the spinach and goat cheese filling.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for about 3–4 minutes on each side until golden brown.
  7. Sprinkle grated Parmesan cheese over each chicken breast.
  8. Transfer your skillet to the oven and bake for 20–25 minutes, or until the chicken is cooked through, reaching an internal temperature of 165°F.
  9. Rest the chicken for a few minutes before slicing and serving warm.
