  • 2 cups water

  • 4 cups fresh spinach chopped
  • 1 can diced tomatoes with juices

Method

How to Make Spinach Beef Soup
  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the beef stew meat and season with salt and pepper. Brown on all sides for 5-7 minutes.
  3. Add the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  4. Stir in the sliced carrots and celery. Cook for another 3-4 minutes.
  5. Pour in the beef broth and water, bringing to a gentle boil.
  6. Sprinkle in the dried thyme and oregano along with additional salt and pepper to taste.
  7. Reduce heat to low, cover, and simmer for about 45 minutes.
  8. Incorporate the chopped spinach and diced tomatoes, cooking for an additional 5-10 minutes until the spinach wilts.
  9. Optionally, stir in lemon juice for added brightness.
  10. Taste and adjust the seasoning with more salt and pepper if needed.
  11. Serve warm in bowls.
