Ingredients

  • 8 oz Udon noodles fresh or frozen

  • 2 tbsp Vegetable oil for high-heat frying
  • 1 medium Bell pepper any color, sliced
  • 1 medium Carrot sliced
  • 1 cup Broccoli florets fresh
  • 1 cup Snap peas tender-crisp
  • 3 tbsp Green onions sliced, for garnish
For the Aromatics
  • 2 cloves Garlic minced
  • 1 tbsp Ginger grated
For the Sauce
  • 1 tbsp Sesame oil
  • 1/4 cup Soy sauce
  • 1 tbsp Sriracha
  • 1 tbsp Rice vinegar
  • 1 tbsp Honey
  • 1 tbsp Cornstarch

Preparation
  1. Cook the Noodles: Prepare the udon noodles according to the package instructions if they're fresh. If using frozen, thaw them under warm water, drain well, and set aside.
  2. Whisk the Sauce: In a small bowl, whisk together the soy sauce, sriracha, rice vinegar, honey, and cornstarch until smooth.
  3. Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
  4. Stir-Fry the Veggies: Add the sliced bell pepper, carrot, broccoli florets, and snap peas to the skillet. Stir-fry for about 3–4 minutes.
  5. Add Aromatics: Toss in the minced garlic and grated ginger, cooking for an additional 30 seconds.
  6. Combine with Noodles: Add the cooked udon noodles to the skillet, tossing gently with the veggies.
  7. Pour Over Sauce: Drizzle the prepared spicy sauce over everything in the skillet. Toss together for about 2–3 minutes.
  8. Finish with Sesame Oil: Drizzle the sesame oil over your stir-fry, giving it a final toss.
  9. Serve Hot: Dish out the hot stir-fry, garnishing it with freshly sliced green onions.
