Method

Cooking Instructions
  1. Preheat your equipment by warming a cast-iron skillet or griddle over medium-high heat.
  2. Add the ground beef to the hot skillet. Season generously with salt, pepper, and optional spices. Smash the beef down with a spatula to form thin patties. Cook for about 2–3 minutes until browned.
  3. Flip the patties carefully and place a slice of cheese on top of each one. Cook for another 1–2 minutes until the cheese is melted.
  4. Place a tortilla in the skillet over medium heat. Evenly sprinkle half of the shredded cheese over the tortilla.
  5. Layer the cooked smash burger patties on top of the cheese, adding desired toppings.
  6. Sprinkle the remaining shredded cheese over the filling, then top with a second tortilla.
  7. Cook for about 3–4 minutes on one side until golden brown. Carefully flip the quesadilla and cook for an additional 3–4 minutes.
  8. Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling.
  9. Cut the quesadillas into wedges, then serve with your favorite dipping sauces.
