For the Salmon
  • 4 fillets salmon about 6 ounces each; choose wild-caught for best flavor
  • salt and pepper to taste; season generously
For the Potatoes
  • 1 pound baby potatoes halved
  • 2 tablespoons olive oil can substitute with avocado oil
  • 1 teaspoon garlic powder fresh minced garlic works well if preferred
  • 1 teaspoon dried thyme or use fresh thyme if available
  • 1 teaspoon paprika for mild smokiness; smoked paprika can be used for an extra kick
For the Veggies
  • 1 cup green beans trimmed
  • 1 lemon lemon sliced

  • fresh parsley for garnish

Method

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.
  2. Toss the halved baby potatoes with olive oil, garlic powder, dried thyme, paprika, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  4. Roast the potatoes for about 15 minutes, or until they start to soften.
  5. Season the salmon fillets with salt and pepper.
  6. Remove the baking sheet from the oven, push the potatoes to one side, and add the salmon fillets.
  7. Scatter the trimmed green beans around the salmon and potatoes, then place lemon slices on top of the salmon.
  8. Return the baking sheet to the oven and roast for an additional 10–15 minutes.
  9. Garnish with fresh parsley if desired, then serve hot.
