Method
Making the Bites
In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and almond extract (if using). Stir until everything is smooth and well blended.
Using a small cookie scoop or your hands, gently form the ricotta mixture into small balls, about 1 inch in diameter.
Roll each ricotta ball in the chopped pistachios until they are fully coated.
Place the pistachio-coated bites on a plate or tray and refrigerate for at least 30 minutes.
Just before serving, drizzle the bites with honey.
