Ingredients

Method

Making the Bites
  1. In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and almond extract (if using). Stir until everything is smooth and well blended.
  2. Using a small cookie scoop or your hands, gently form the ricotta mixture into small balls, about 1 inch in diameter.
  3. Roll each ricotta ball in the chopped pistachios until they are fully coated.
  4. Place the pistachio-coated bites on a plate or tray and refrigerate for at least 30 minutes.
  5. Just before serving, drizzle the bites with honey.
  6. Optionally, garnish with fresh mint leaves before serving.
  7. Serve chilled as a delightful snack or dessert.
