Method

How to Make Ricotta Pistachio Honey Bites
  1. In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and almond extract (if using). Stir until the mixture is smooth and creamy.
  2. Using a small cookie scoop or your hands, shape the ricotta mixture into small balls, about 1 inch in diameter.
  3. Roll each ricotta ball in the finely chopped pistachios until they're fully coated.
  4. Place the pistachio-coated bites on a plate or tray and refrigerate them for at least 30 minutes.
