Method

Instructions
  1. Preheat your oven to 350°F (175°C). Grease and flour the pans.
  2. Sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. Whisk the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar together.
  4. Combine the wet and dry ingredients, stirring gently until just incorporated.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes in the pans for about 10 minutes before transferring them to a wire rack.
  8. Beat the softened cream cheese and butter together until smooth and creamy.
  9. Add the powdered sugar gradually, mixing until fluffy, then add the vanilla extract.
  10. Adjust the frosting consistency with milk if necessary.
  11. Level the tops of the cooled cakes with a knife if needed.
  12. Assemble the cake by placing one layer on a plate, frosting it, and topping with the second layer.
  13. Decorate with additional frosting, sprinkles, or fresh berries if desired.
  14. Slice the cake and serve at room temperature.
