  • 1 pinch salt

  • 1 cup additional shredded coconut for coating

Method

Instructions
  1. Mash the raspberries in a medium bowl until mostly smooth, leaving some small chunks for texture.
  2. Combine the ingredients: Add shredded coconut, almond flour, honey, vanilla extract, and a pinch of salt to the mashed raspberries and mix well.
  3. Chill the mixture in the refrigerator for about 15 minutes.
  4. Scoop small amounts of the mixture and roll them into balls, about 1 inch in diameter.
  5. Roll the formed snowballs in additional shredded coconut until fully coated.
  6. Refrigerate the snowballs on a parchment-lined tray for another 15 minutes.
  7. Serve chilled and enjoy!
