Preparation
Preheat your oven to 350°F (175°C) and prepare your baking dish.
Mix the raspberries with sugar, cornstarch, lemon juice, and vanilla extract in a medium bowl.
Combine rolled oats, all-purpose flour, brown sugar, baking powder, and salt in a large bowl.
Pour the melted butter into the dry ingredients and mix until crumbly.
Press two-thirds of the crumble mixture into the bottom of the baking dish.
Spread the raspberry filling evenly over the crumble base.
Sprinkle the remaining crumble mixture over the raspberry filling.
Bake for 25-30 minutes until the topping is golden brown and the filling is bubbling.
Cool the bars in the baking dish for at least 15 minutes before slicing.
Slice into squares and enjoy!
Notes
Serve with a dollop of whipped cream for an extra touch of delight.
