Method

Instructions
  1. Preheat your oven to 350°F (175°C). Grease your baking dish or line with parchment paper.
  2. Mix raspberries, sugar, cornstarch, lemon juice, and vanilla extract in a bowl and toss gently.
  3. Combine rolled oats, flour, brown sugar, baking powder, and salt in a large bowl.
  4. Pour melted butter into the dry ingredients and stir until crumbly.
  5. Press two-thirds of the crumble mixture into the bottom of the prepared baking dish.
  6. Spread raspberry filling evenly over the crumble base.
  7. Sprinkle the remaining crumble mixture over the raspberry filling.
  8. Bake in your preheated oven for 25-30 minutes until golden brown.
  9. Cool bars in the dish for at least 15 minutes before slicing.
  10. Slice into squares and enjoy!
