Ingredients

Brownie Batter
  • 1 cup black beans cooked and drained
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder ensure it's unsweetened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup protein powder
  • 1/4 cup chocolate chips optional, dark chocolate preferred

Method

Making the Brownie Bites
  1. Preheat your oven to 350°F (175°C). Prepare a mini muffin tin with paper liners or cooking spray.
  2. Blend the black beans, peanut butter, honey, cocoa powder, baking powder, salt, vanilla extract, and protein powder in a food processor until smooth.
  3. Fold in the chocolate chips (if using) with a spatula.
  4. Spoon the brownie batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 15-20 minutes, checking for doneness with a toothpick.
  6. Cool the brownie bites in the pan for about 5 minutes before transferring them to a wire rack.
  7. Serve and enjoy! Store leftovers in an airtight container in the fridge for up to a week.
