Method

How to Make Potato Gnocchi in a Sage Sausage Butter Sauce
  1. Preheat your oven to 400°F.
  2. Bake the large baking potatoes for about 45 minutes until tender. Peel and mash until smooth.
  3. In a large bowl, mix the mashed potatoes, 1/2 teaspoon salt, 1 large egg, and 1 cup all-purpose flour until a soft dough forms.
  4. On a floured surface, roll the dough into long ropes about 1/2 inch thick. Slice into 1-inch pieces.
  5. Bring a pot of salted water to a rolling boil. Add the gnocchi in batches and cook until they float, about 2–3 minutes.
  6. In a skillet over medium heat, cook the sage sausage until browned, about 7–10 minutes. Set aside.
  7. In the same skillet, melt butter and sauté the diced onion until translucent. Add garlic, ground sage, seasoning blend, salt, and pepper. Cook for 1–2 minutes.
  8. Bring back the sausage and add vegetable broth. Let it simmer for 5 minutes.
  9. Gently toss the cooked gnocchi into the sauce and serve hot.
