How to Make Potato Gnocchi in a Sage Sausage Butter Sauce
Preheat your oven to 400°F.
Bake the large baking potatoes for about 45 minutes until tender. Peel and mash until smooth.
In a large bowl, mix the mashed potatoes, 1/2 teaspoon salt, 1 large egg, and 1 cup all-purpose flour until a soft dough forms.
On a floured surface, roll the dough into long ropes about 1/2 inch thick. Slice into 1-inch pieces.
Bring a pot of salted water to a rolling boil. Add the gnocchi in batches and cook until they float, about 2–3 minutes.
In a skillet over medium heat, cook the sage sausage until browned, about 7–10 minutes. Set aside.
