How to Make Pistachio Dream Cookie Bars
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and line it with parchment paper.
Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Beat in the eggs one at a time, along with the vanilla extract, until well combined.
Whisk together the flour, baking soda, and salt in a separate bowl. Slowly add to the wet ingredients, mixing until just combined.
Gently fold in the chopped pistachios until evenly distributed.
Spread the cookie dough evenly into the prepared baking dish and smooth the top.
Bake for 25–30 minutes, or until edges are lightly golden and a toothpick inserted comes out clean.
Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Pour the melted white chocolate over the cooled cookie bars and spread evenly.
Sprinkle the additional chopped pistachios on top while chocolate is still warm.
Allow the topping to set for about 30 minutes, then slice into squares.
