How to Make Pineapple Upside Down Sugar Cookies
Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
Beat in the large egg and vanilla extract until well combined.
Whisk together the flour, baking soda, and salt in another bowl.
Combine the dry ingredients with the wet mixture gradually, mixing until just combined.
Chop the drained pineapple slices into smaller pieces if desired.
Mix brown sugar with a bit of pineapple juice in a small bowl to form a paste.
Scoop the cookie dough onto the prepared baking sheets, spacing each mound about 2 inches apart.
Press a piece of pineapple into the center of each cookie, then drizzle the brown sugar mixture over the pineapple.
Bake in the preheated oven for 12–15 minutes, or until the edges are lightly golden.
Cool the cookies on the baking sheets for a few minutes before transferring them to a wire rack.
Serve the cookies warm or at room temperature.
