Method

How to Make Pineapple Coconut Mousse Cups
  1. Mix the diced pineapple, sugar (if using), and lemon juice together in a bowl. Let sit for a few minutes to macerate.
  2. Sprinkle gelatin over water in a small bowl and let sit for about 5 minutes.
  3. Heat the bloomed gelatin in the microwave for about 10 seconds until fully dissolved. Allow it to cool slightly.
  4. In a mixing bowl, whip heavy cream and powdered sugar together until soft peaks form. Fold in coconut cream and vanilla extract.
  5. Stir the dissolved gelatin into the whipped mixture gently.
  6. In individual cups, add a layer of the coconut mousse, smoothing it out evenly.
  7. Spoon the macerated pineapple on top of the mousse layer.
  8. Top with another layer of coconut mousse, smoothing the surface.
  9. Cover with plastic wrap and refrigerate for at least 2-4 hours to set.
  10. Garnish with toasted coconut flakes or fresh fruit before serving, if desired.
