  • 1/2 cup vegetable oil or melted coconut oil
  • 3 large eggs room temperature

Whipped Topping Ingredients
  • 1 cup heavy cream chilled for easier whipping
  • 1/4 cup powdered sugar to taste
  • 1/2 cup shredded coconut for garnish
Optional Garnishes
  • 2 slices fresh pineapple for decoration
  • 6 pieces maraschino cherries for garnish

Method

Making the Cake
  1. Preheat your oven to 350°F (175°C). Grease and flour your baking dish.
  2. Mix together the cake ingredients in a large bowl until smooth.
  3. Pour the batter into the prepared baking dish, spreading it evenly.
  4. Bake for 25–30 minutes until a toothpick inserted comes out clean.
  5. Cool the cake in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Topping the Cake
  1. Whip the heavy cream with powdered sugar until soft peaks form.
  2. Spread the whipped cream over the cooled cake.
  3. Sprinkle toasted shredded coconut over the whipped cream.
  4. Optionally decorate with fresh pineapple slices and maraschino cherries.
  5. Slice into squares and serve chilled or at room temperature.
