Method

Instructions
  1. In a large bowl, mix together the creamy peanut butter, honey (or maple syrup), rolled oats, vanilla extract, and salt until thoroughly combined.
  2. Line an 8x8-inch baking dish with parchment paper, leaving some overhang.
  3. Transfer the peanut butter mixture into the lined baking dish and press it down firmly into an even layer.
  4. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals until melted and smooth.
  5. Pour the melted chocolate over the peanut butter layer and spread it evenly with a spatula.
  6. Place the baking dish in the refrigerator for about 30 minutes to allow the chocolate to set.
  7. Once set, lift the bars out of the dish using the parchment paper overhang and cut into squares or rectangles.
