Ingredients

For the Topping
  • 4 ripe peaches (sliced) use fresh, juicy peaches for the sweetest flavor and best texture
  • 1/4 cup unsalted butter provides a rich base for caramelizing the peaches
  • 1/2 cup brown sugar (packed) caramelizes beautifully and enhances the cake's depth with its rich flavor
  • 1 teaspoon vanilla extract adds a lovely aroma and enhances the sweetness of the peaches
For the Cake Batter
  • 1 1/2 cups all-purpose flour gives the cake its structure
  • 1 teaspoon baking powder ensures the cake rises perfectly
  • 1/2 teaspoon baking soda works with the buttermilk for added leavening
  • 1/4 teaspoon salt balances the sweetness of the cake
  • 1/2 cup unsalted butter (softened) creates a moist and tender crumb in the cake
  • 1 cup granulated sugar sweetens the batter beautifully
  • 2 large eggs helps bind the ingredients together and contributes to the fluffiness of the cake
  • 1 teaspoon vanilla extract for an extra layer of warmth and flavor
  • 1/2 cup buttermilk keeps the cake moist and adds a subtle tang

Equipment

  • 9-inch round cake pan
  • Mixing bowl
  • whisk
  • spatula

Method

Directions
  1. Preheat your oven to 350°F (175°C). In a 9-inch round cake pan, melt the butter over low heat on the stovetop or in the oven. Once melted, sprinkle the brown sugar evenly on top, mixing in the vanilla extract.
  2. Arrange the sliced peaches in a beautiful circular pattern over the brown sugar mixture. This not only creates a lovely design but ensures every slice is bursting with peach flavor. Set aside while you prepare the batter.
  3. Combine the dry ingredients. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  4. Beat together softened butter and granulated sugar in a large mixing bowl until it’s light and fluffy — about 3 to 4 minutes.
  5. Add the eggs one at a time, making sure to mix well after each addition. Then, stir in the vanilla extract.
  6. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
  7. Pour the cake batter over the arranged peaches in the pan, using a spatula to spread it evenly.
  8. Bake in the preheated oven for 35–40 minutes. The cake is ready when a toothpick inserted in the center comes out clean and the top turns golden brown.
  9. Cool the cake in the pan for about 10 minutes. Then, gently run a knife around the edges to loosen it. Invert the cake onto a serving plate to reveal the luscious peaches on top.
  10. Slice and serve warm or at room temperature, and watch as smiles spread across faces!
