Preparation Steps
Preheat your oven to 350°F (175°C).
Grease a 9x13-inch baking dish.
Cook the crumbled breakfast sausage in a skillet over medium heat until browned, about 5–7 minutes.
Drain excess grease and set aside.
Whisk together the eggs, milk, maple syrup, and vanilla extract in a bowl until combined.
Combine flour, baking powder, and salt in a separate bowl. Gradually add dry mixture to wet ingredients, stirring gently.
Layer half of the pancake batter into the prepared baking dish, then sprinkle with cooked sausage and half of the cheese.
Pour remaining batter over the sausage and cheese layer, topping with the remaining cheese.
Bake for 30–35 minutes, or until set and lightly golden on top.
Cool for a few minutes before slicing.
Serve warm, cut into squares, and drizzle with additional maple syrup.
Notes
For best results, use room temperature ingredients and avoid overmixing the batter to keep the casserole fluffy.
