Preparation Steps
Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan, lining it with parchment paper.
Combine the graham cracker crumbs, sugar, and melted butter in a mixing bowl, stirring until coated.
Press the crumb mixture into the bottom of the prepared baking pan, creating an even layer.
Beat the softened cream cheese in a large mixing bowl until smooth and creamy.
Gradually add the granulated sugar and vanilla extract, mixing until well combined.
Add the eggs one at a time, mixing on low speed until combined without overmixing.
Fold in the Nutella and optional sour cream gently until fully incorporated.
Pour the cheesecake filling over the crust, spreading it evenly and admiring the Nutella swirls.
Bake for 30–35 minutes until the edges are set and the center is slightly jiggly.
Cool the bars at room temperature for 30 minutes, then refrigerate for at least 2 hours to set.
Lift the bars out using the parchment overhang, slice into squares, and serve with extra Nutella or whipped cream.
Notes
Ensure cream cheese is softened before mixing. Let the bars cool to achieve the right texture.
