Ingredients

For the Meatloaf
  • 1 pound Ground beef Can substitute with ground turkey or chicken.
  • 1 medium Onion Yellow or red onions are great substitutes.
  • 1 medium Green bell pepper Swap for red or yellow peppers for a sweeter taste.
  • 1 cup Tomato Canned diced tomatoes work well if fresh isn’t available.
  • 1 large Egg Use a flax egg for a vegan alternative.
  • 2 cloves Garlic Use garlic powder if fresh isn’t on hand.
  • 1 cup Seasoned bread crumbs Crushed crackers or panko can be good substitutions.
For the Cheese Layer
  • 8 ounces Muenster cheese Try mozzarella for a milder flavor.
  • 1 cup Shredded cheddar cheese Feel free to mix in your favorite cheese blends.
For the Mashed Potatoes
  • 1 package Idahoan mashed potatoes Homemade mashed potatoes can add a personal touch.

Method

How to Make Mom's Meatloaf
  1. Preheat your oven to 350°F (175°C). Lightly grease a baking pan to prevent sticking.
  2. Combine the ground beef, chopped onion, diced bell pepper, diced tomato, egg, garlic, and seasoned bread crumbs in a large bowl. Mix until everything is well combined.
  3. Press half of the meat mixture into the prepared baking pan, forming a solid base layer.
  4. Layer the Muenster cheese slices evenly over the meat base.
  5. Add the remaining meat mixture on top. Press gently to form an even layer.
  6. Spread the prepared mashed potatoes over the top of the meatloaf cake.
  7. Sprinkle the shredded cheddar cheese over the mashed potatoes.
  8. Bake for 45–55 minutes, or until the meat is fully cooked and the cheese is melted and golden brown.
  9. Let the meatloaf cake rest for 5–10 minutes before slicing and serving.
