Ingredients

  • 1 large egg

  • 1/4 cup maple syrup or your favorite syrup
  • 1 cup fresh fruits such as berries, banana slices, or sliced peaches
  • 1/2 cup whipped cream optional
  • 1/4 cup chocolate chips optional

Method

Directions
  1. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Use a tablespoon or small squeeze bottle to pour tiny circles of batter onto the skillet.
  6. Cook for about 1–2 minutes on each side until golden brown.
  7. Place a generous portion of mini pancakes into a bowl.
  8. Drizzle with maple syrup and add your favorite toppings.
