Ingredients

For the Skillet
  • 1 pound ground chicken the star of this dish, lean and loaded with protein

  • Salt and pepper to taste, enhance all the flavors
For the Garnish
  • 1 cup cherry tomatoes, halved brings freshness and a natural sweetness when cooked
  • 1/2 cup Kalamata olives, pitted and sliced for a burst of briny goodness
  • 1/2 cup feta cheese, crumbled creamy and tangy
  • Fresh parsley, chopped a pop of color and fresh flavor

Method

  1. In a large skillet, warm the olive oil over medium heat until it shimmers.
  2. Add the diced onion and let it cook for about 3–4 minutes until softened and translucent. Stir in the minced garlic, cooking for an additional 30 seconds until fragrant.
  3. Introduce the ground chicken to the skillet and cook while breaking it apart with a spatula until it's no longer pink, about 5–7 minutes.
  4. Sprinkle in the dried oregano, thyme, smoked paprika, salt, and pepper. Mix well.
  5. Toss in the halved cherry tomatoes and sliced olives. Cook for another 3–4 minutes until the tomatoes soften.
  6. Remove from heat and immediately sprinkle the crumbled feta cheese over the top.
  7. Finish with a sprinkle of fresh parsley before serving.

Notes

Use a heavy-bottomed skillet for even cooking. Avoid overcrowding the pan to properly brown the chicken. Let the meat rest for a couple of minutes after cooking to enhance flavor.
