Method
In a large skillet, warm the olive oil over medium heat until it shimmers.
Add the diced onion and let it cook for about 3–4 minutes until softened and translucent. Stir in the minced garlic, cooking for an additional 30 seconds until fragrant.
Introduce the ground chicken to the skillet and cook while breaking it apart with a spatula until it's no longer pink, about 5–7 minutes.
Sprinkle in the dried oregano, thyme, smoked paprika, salt, and pepper. Mix well.
Toss in the halved cherry tomatoes and sliced olives. Cook for another 3–4 minutes until the tomatoes soften.
Remove from heat and immediately sprinkle the crumbled feta cheese over the top.
Finish with a sprinkle of fresh parsley before serving.
Use a heavy-bottomed skillet for even cooking. Avoid overcrowding the pan to properly brown the chicken. Let the meat rest for a couple of minutes after cooking to enhance flavor.
