Ingredients

For the Marinade
  • 1/4 cup Extra virgin olive oil adds a rich, fruity flavor
  • 2 tablespoons Red wine vinegar provides a tangy kick
  • 2 cloves Garlic minced; roast for milder taste
  • 1 teaspoon Dried oregano or fresh for brighter flavor
  • to taste Salt for enhancing flavors
  • to taste Pepper for enhancing flavors
For the Tomatoes
  • 4 large Ripe tomatoes choose heirloom or vine-ripened
  • 1/4 cup Fresh basil leaves for garnish, optional

Method

How to Make Marinated Tomatoes
  1. Wash tomatoes thoroughly, slice into wedges or chop into pieces, and place in a large bowl.
  2. In a small bowl, combine olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper. Whisk until smooth.
  3. Pour the marinade over the tomatoes, and gently toss to coat evenly.
  4. Let marinate at room temperature for at least 30 minutes, up to 2 hours for best flavor.
  5. Before serving, sprinkle fresh basil leaves over the tomatoes.
