Preparation
Wash and slice the ripe tomatoes thoroughly. Then, slice them into wedges or chop them into bite-sized pieces, placing them in a large bowl.
In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.
Pour the marinade over the tomatoes and gently toss to coat them evenly.
Let the tomatoes sit at room temperature for at least 30 minutes to allow the flavors to develop.
Before serving, sprinkle with fresh basil leaves if desired.
