Ingredients

For the Crust
  • 1 cup Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter (melted)
For the Filling
  • 16 oz Cream cheese (softened)
  • 3/4 cup Granulated sugar
  • 2 large Large eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Mango puree (fresh or canned)
  • 1/2 cup Passionfruit puree (fresh or canned)

Method

How to Make
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl.
  3. Press the crumb mixture firmly into the bottom of the prepared baking pan and bake for 8-10 minutes.
  4. Beat the softened cream cheese and granulated sugar together until smooth and creamy.
  5. Add the eggs one at a time, then stir in the vanilla extract, mango puree, and passionfruit puree.
  6. Pour the cheesecake filling over the cooled crust and spread it evenly.
  7. Bake in the oven for 30-35 minutes until the center is set with a slight jiggle.
  8. Cool the bars at room temperature for about 1 hour, then refrigerate for at least 4 hours.
  9. Lift the bars out of the pan using the parchment overhang and cut into squares.
  10. Serve chilled and enjoy!
