Ingredients

Dough Ingredients
  • 2 cups Almond flour a low-carb alternative to regular flour
  • 1 cup Shredded mozzarella cheese for the dough
  • 4 oz Cream cheese softened
  • 1 large Egg to bind the dough
  • 2 tsp Baking powder
  • 1 tsp Italian seasoning for flavor
  • 1 tsp Garlic powder
  • 1 tsp Salt to taste

  • 1/2 cup Pizza sauce low carb
  • 1 cup Shredded mozzarella cheese for filling
  • 1 cup Pepperoni slices or other toppings like mushrooms, olives, or bell peppers
  • 1/4 cup Grated Parmesan cheese optional for topping

Method

Directions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the cheeses by placing the shredded mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until everything is melted and smooth.
  3. Whisk together the dry ingredients: almond flour, baking powder, Italian seasoning, garlic powder, and salt. Mix in the melted cheese mixture and egg until a cohesive dough forms.
  4. Roll out the dough between two sheets of parchment paper into a rectangle, about 1/4 inch thick.
  5. Spread the pizza sauce over the dough, leaving a border. Sprinkle shredded mozzarella and your choice of toppings.
  6. Roll the dough tightly from one long side to the other to form a log.
  7. Slice the log into 1-inch pieces and place them cut-side up on the baking sheet.
  8. Bake for 15-20 minutes until golden brown and cheese is bubbly.
  9. Cool for a few minutes before serving warm with additional pizza sauce for dipping.

Notes
