Ingredients

For the Nachos
  • 1 pound cooked chicken shredded
  • 12 ounces tortilla chips choose sturdy chips
  • 2 cups shredded cheese blend of cheeses
  • 1 can black beans 15 ounces, rinsed and drained
  • 1 cup corn canned, frozen, or fresh
  • 1 jalapeño sliced or diced
For the Toppings
  • 1/2 cup diced tomatoes fresh
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1 avocado
For Serving
  • sour cream for serving
  • salsa for serving
  • 1 tablespoon taco seasoning optional

Method

Directions
  1. Preheat your oven to 350°F (175°C).
  2. Toss the cooked chicken with taco seasoning if using.
  3. Spread the tortilla chips in an even layer on a large baking sheet or oven-safe platter.
  4. Add the chicken, black beans, corn, diced tomatoes, and sliced jalapeños on top of the chips.
  5. Sprinkle the shredded cheese evenly over everything.
  6. Bake for 10–15 minutes, until the cheese is melted and bubbly.
  7. Remove from the oven and top with diced avocado, chopped cilantro, and sliced green onions.
  8. Serve immediately with sour cream and salsa.
