Method

How to Make Lemon Poppy Seed Energy Bites
  1. In a large mixing bowl, combine the rolled oats, almond butter, honey, lemon juice, lemon zest, poppy seeds, vanilla extract, and salt. Blend them all together until well mixed.
  2. Use a spatula or spoon to stir until all ingredients are fully combined. The mixture should hold together well without being too dry or overly sticky.
  3. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  4. If the mixture feels too sticky, simply wet your hands with a little water to make rolling easier.
  5. Place the energy bites on a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to let them firm up nicely.
  6. Once they are chilled, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to 1 week or in the freezer for up to 3 months.
