Ingredients

For the Orzo
  • 1 cup Orzo pasta a tiny, rice-shaped pasta that cooks quickly
  • 2 cups Vegetable broth adds depth and richness
For the Aromatics
  • 2 tablespoons Olive oil use extra virgin for the best taste
  • 2 cloves Garlic adjust based on your preference
For the Freshness
  • 1 cup Fresh parsley substitute with cilantro if preferred
  • 1 cup Fresh basil fresh is best, dried can be used in a pinch
For the Zesty Kick
  • 1 tablespoon Lemon juice fresh is preferable
  • 1 teaspoon Lemon zest avoid the white pith for better taste
Optional Add-Ins
  • 1/4 cup Grated Parmesan cheese omit for a dairy-free version
  • Salt and pepper season to taste

Method

Directions
  1. In a medium saucepan, bring the vegetable broth to a boil over medium-high heat.
  2. Stir in the orzo pasta and let it cook according to package instructions, usually about 8-10 minutes.
  3. Once cooked, drain any excess liquid if necessary, and gently return the orzo to the saucepan.
  4. In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Pour the sautéed garlic over the cooked orzo. Add the lemon juice, lemon zest, chopped parsley, chopped basil, and grated Parmesan cheese.
  6. Taste and season with salt and pepper as desired.
  7. Transfer the Lemon Herb Orzo to a serving dish and enjoy warm.

Notes
