Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan, or line it with parchment paper for easy removal.
Combine in a medium bowl, 1 3/4 cups of flour, 3/4 cup granulated sugar, salt, and baking powder. Stir gently until evenly mixed.
Add the cold butter pieces into the flour mixture. Use a pastry cutter or your fingers to mix until you achieve a coarse crumb texture.
Reserve about 1 cup of the crumb mixture for the topping, and then press the remaining mixture firmly into the bottom of the prepared pan.
Whisk together in a separate bowl, 1 cup granulated sugar, eggs, lemon juice, lemon zest, 1/4 cup flour, and 1/2 teaspoon baking powder until smooth.
Pour the lemon filling over the prepared crust in the baking pan. Make sure it’s evenly spread.
Sprinkle the reserved crumb mixture evenly over the lemon filling.
Bake in your preheated oven for 25-30 minutes, or until the topping is golden brown and the filling is set.
Cool the bars in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Dust the cooled bars with powdered sugar before cutting them into squares.
Serve chilled or at room temperature to enjoy the fresh, bright flavor of your Lemon Crumb Bars!
Notes
Ensure your butter is very cold to achieve the perfect crumbly texture in the crust. Avoid overmixing the butter with the flour mixture.
